I saw a lot of bad news about meat, how can we know what we buy. Are there any stamp that says "beef is safe to buy and eat" and then believe what we?

Shop at Whole Foods Market or Central Market, I guarantee you the meat you are sure of course, a little on the expensive side, but better safe than sorry.

go to the ranch, buying a cow, then go to a butcher to cut it for you, which is probably the only way, oh, and if you know and trust the farmers.

If I decide .. I would say go to a grocery-style health. a place where fresh vegetables and what is not sold. but I want more help. If not, then you probably should ask the butcher?
